朱古力海綿蛋糕(最成功一次)暨焦糖古力雙層mousse cake


今次主要想介紹下個海綿蛋糕底, 係咁多次整朱古力蛋糕底最好既一次~效果同原味差唔多呢 ^0^ 之前整驚可可粉蛋糕都好易沉, 阿sir話可可粉既特性, 今次同低粉一齊篩多幾次, 真係好好多喎 *0* 唔會死實實~!



之後用左黎整呢個蛋糕


上層用左85%黑朱太苦>< 下層係之前都整過俾同事既焦糖mousse, 今次用返白蘭地終於唔會一 陣酒精味喇XD daddy話2層夾埋食冇問題, 我就覺得朱古力太苦>_<

    呢排成日睇你個blog,好多好野食,睇到我流晒口水
    呢幾日係度喪整cake,但係我唔係用焗爐,係用光波爐,所以溫度同時間上係有差異。
    想請問你呢?如果我掌握唔倒時間,我用支牙籤篤入個cake到睇支牙籤痴唔痴就ok架喇?
    因為我唔知用焗爐焗蛋糕,出爐嘅蛋糕係咪都唔痴牙籤?
    我依家整嘅cake都係用呢個方法,完全跟唔倒食譜嘅溫度去整。所以問吓你囉。唔該晒~~~

    或者可以試下手按蛋糕面, 有彈性就係熟, 阿SIR係用呢個方法測試, 不過我就未試過
    我呢排反而好少整野食呢:P

    全蛋3隻+糖55g打起, 打到打蛋杆黏起蛋漿唔跌落黎或者跌少少, 可可粉10g+低粉50g過篩3次, 拌入蛋漿中輕手拌勻, 未勻晒就可以一路輕手拌一路加入菜油30g(牛油都得不過我覺得液體菜油易勻d焗得好d, 又健康d), 輕手兜底拌勻, 180-190度焗35分鐘或至熟, 插入竹簽測試, 唔黏即熟
