扭扭千層脆條(附食譜)~第一次搓酥皮

1. 牛油225g切小丁,篩入高低粉各125g拌勻;

2. 5g鹽+125g水拌溶慢慢倒入(1),以刮刀略拌成團;

3. 以手捏合成團狀,將面團放入膠袋,略壓扁後放冰格鬆弛60分鐘;

4. 取出輾平成長方形,上1/3長度向中間褶,下1/3長度同樣向中間褶,再放入冰格雪30分鐘;

5. 取出展平,與之前成90度方向轉,然後跟(4)一樣方法褶好再雪30分鐘;重覆4-6次即成酥皮。

6. 展成0.5cm厚薄,切成1cm闊,扭成螺旋棒狀排入烤盤,200'c焗10分鐘即成。

第一次自己搓酥皮~呢個方法好簡單,唔駛分水皮油皮,不過都要每半個鐘o係雪櫃拎出黎輾一輾褶一褶, 都搞左成日, 整完可以雪3個月, 但我今次初試牛刀只係整左200g
